Double Chocolate Cookie Time

If you love chocolate, you have to make these cookies! They have the perfect balance of sweet, crispy, chewy, and chocolaty. But not too sweet. Yum. Get me another!

To make these cookies, pre-heat your oven to 375ºF. Mix 1 1/4 cups of flour, 1 cup of sugar, 1/2 cup of cocoa powder, and 1 teaspoon of baking soda. I did my mixing in the food processor just to make things a little easier. Then, mix in 1 stick of room temperature butter (1/2 cup), 1 tablespoon of vegetable oil, and 1 egg.

You can also mix 1/4 cup of chocolate chips into the batter.

I finished off mixing the dough with my hands to make sure everything was really well-incorporated.

Then, shape the dough into balls and space them out on a cookie sheet. I used a small ice cream scooper on my dough to make sure the cookies all ended up the same size. Flatten the balls a little bit with your hands to end up with flatter cookies. Bake your cookies for 7 to 9 minutes. Cook them less for chewier cookies or longer for crispier ones.

Once the cookies are baked to perfection, let them cool. Then dig in! These cookies are extra delicious when served with some ice cream or fresh berries.
