Squasheroni Pizza

Squash and pepperoni make the most complementary pizza toppings- who would have thought?! A little sweet, a little salty, a little spicy, a lot delicious. To make this pizza, preheat your oven to 500ºF. Stretch your favorite pizza dough as thin as it will go, and put it on a greased pizza pan. Drizzle some olive oil over the top of the crust, and spread it around with your hands. Season the crust with salt and pepper, and then sprinkle mozzarella cheese over it.

Mince a garlic clove and dice some onion. Sprinkle them both on the pizza. Pick your favorite kind of squash– I used a delicata- and remove its skin and seeds. Slice the squash to, at most, 1/4 inch thick. Spread it evenly on the pizza.

You can either put the pepperoni right on the pizza and cook the whole thing for 10 minutes, or you can cook the pepperoni separately to avoid getting excess oil on the pizza. If you’re cooking the pepperoni separately, lay the pieces on a cookie sheet and bake it for 3 minutes. Then, drain the pepperoni on paper towels, and put them on the pizza after it has cooked for 10 minutes. Let the pizza cool for a few minutes before slicing it, and then enjoy your fun fall dinner (or snack).
