One-of-a-Kind, Crunchy Eggplant Salad

This eggplant salad is really unique and delicious. I can’t wait to experience its flavors again! I was inspired to make this salad after eating the eggplant we picked from the garden. Live Off the Land

My family planted a beautiful garden this year, and it has produced a lot of delicious vegetables. Even more are still growing and ripening!
