Witty’s Text Messages: Sister Edition

My family sends group text messages in excess. The texting sessions spring up at any time, they can last forever, and the subject matter is never the same. As annoying as this mass communication can be, I love it. The other day, we had this gem:

  • My youngest sister sent a picture of her dinner. It looks like a nice piece of salmon over cous cous with a sliced avocado.

  • My mom responded: Yum. I’m so proud of how nicely you cook for yourself. Good job!!
  • Then my middle sister chimed in: YUM!! I just dropped my dinner on the floor. #imhungry #parkersfull

Parker is her very cute pup. And I can guarantee you that, before she got him, dropping her dinner on the floor would not have left her hungry. Regardless, discussion turned to the dropped food:

  • My youngest sister asked: What did you make
  • Middle sister responded: Ordered sushi
  • Youngest sister jabbed: You need to learn to cook
  • Middle sister replied: I know how to cook
  • And then she followed up with the real zinger: Some of us can afford luxury
  • My still-proud mother capped it off: Lol. You girls are funny

I have no doubt about it- they’re my people!

Curry Chicken Salad

Here is another winning recipe from my cooking class! This healthy chicken salad has a bunch of different textures and flavors in it to keep it interesting, and it’s made with yogurt instead of mayonnaise. It is best to make this chicken salad one day ahead of when you plan on eating it because the flavors mingle and get much more intense overnight. This is the only chicken salad I like, except for the one from Corner Bakery!

To make this chicken salad, bring a pot of water to a boil. Add enough curry powder to the water to turn it yellow, season it with salt, and drop in some onion and celery trimmings for flavor. Then, add in 1.5 pounds of boneless, skinless chicken thighs with the fat trimmed off. Let the thighs simmer for about 10 minutes until they are fully cooked (to an internal temperature of 160º F). Set the thighs aside to cool.

While the chicken thighs poach, prepare the other chicken salad ingredients. To a bowl, add 1/4 cup of finely minced onion, 1/2 cup of diced apple, 1/3 cup of chopped pecans, 1/3 cup of dried cranberries, and 1/3 cup of diced celery. When the chicken thighs are cool enough to handle, dice them into cubes as well and add them to the bowl.

To the mixture, add 1/2 cup of Greek yogurt, 1/4 cup of mango chutney or orange pepper jelly, 1 tablespoon of curry powder, and salt and pepper. Stir the chicken salad to evenly distribute the ingredients, and taste it. Adjust the flavor by adding more of any of the ingredients. Then, cover the chicken salad with plastic wrap and put it in the fridge to cool completely, preferably overnight for maximum flavor. This chicken salad is great on a sandwich or in a lettuce wrap. Or just eat it with a fork!

  • Onion- 1/4 cup, minced
  • Apple- 1/2 cup, diced
  • Pecans- 1/3 cup, chopped
  • Dried cranberries- 1/3 cup

  • Curry powder- 2+ tablespoons
  • Greek yogurt- 1/2+ cup
  • Mango chutney or orange pepper jelly- 1/4 cup
  • Salt and pepper

Funky Finger Food: Wonton Mozzarella Sticks

Back when Georgetown had a chance at winning the NCAA tournament, my very fun office had lunch at a local sports bar to watch them play. Someone ordered cheese sticks, which turned out to be mozzarella sticks in spring roll wrappers. I was inspired! My wonton version with marinara dipping sauce is fantastic and crave-worthy. Five people wolfed down this plate in record speed!

To make these bite-size beauties for yourself, get a package of wonton wrappers and a log of mozzarella cheese. Slice the cheese into rectangles that fit diagonally inside of the wonton wrappers, about 1.25 inches long, 1/2 inch wide, and 1/4 inch high. Then, wrap the mozzarella cheese up like a burrito. Fold the bottom half of the wonton wrapper over the cheese, fold in the two sides, and then continue rolling until the cheese is completely encapsulated. Use a wet finger to seal the outside corner of the wonton wrapper, and then continue rolling the rest of your mozzarella sticks.

Fill a pan about 1/4 inch high with vegetable oil, and heat it over medium-low. The oil is ready when a dropped-in piece of wonton wrapper bubbles around its edges. Once the oil is hot, place your mozzarella sticks into the pan, making sure not to overcrowd them. Let the mozzarella sticks cook on one side for about 30-45 seconds until they are brown and crisp. Flip the mozzarella sticks over to continue cooking. When the mozzarella cheese starts oozing out of the wonton wrappers, they are done. Transfer the mozzarella sticks to paper towels to drain and cool, and continue frying your other batches.

If you want to serve homemade marinara dipping sauce, you should start cooking it at least one hour before you begin working on the mozzarella sticks. Pour 1 can (14 ounces) of plum tomatoes into a pot. Add in 1/4 of a diced onion and 1 minced garlic clove. Let the tomatoes simmer for about 20 to 30 minutes until they have thickened and lost their tartness. Stir the mixture occasionally to keep it from burning and to break up the tomatoes. Add in water to bring the sauce to your desired consistency, and season it with salt, pepper, red pepper flakes, and fresh basil. For ease, you could also serve marinara sauce from a jar.

Arrange the mozzarella sticks around the marinara sauce, dip, and enjoy. To prepare for a party ahead of time, I think you could easily wrap your mozzarella cheese in the wonton wrappers, freeze the sticks, and then fry them when you’re ready. Alternatively, you could fry the mozzarella sticks ahead of time, let them cool, and then reheat them on a baking sheet in the oven. As long as these mozzarella sticks are around, I know your party will be a hit. But once they run out- no guarantees!
